Oh god I love stealth. When you pull something off it's great. Still can't manage to stealth the Pear Store on "Four Stores" yet, but working on it. It's pretty easy with a only a few ghost skills. But the cameras can see through walls.

Very possible, most maps offer multiple ways of stealth runs, both with a team and solo. Though there are some heists that throw you straight in the action so you can't stealth them.
