Play Morrowind for a little bit before you install mods. You don't want to go though a long process before you figure out you don't even like the game.

Or maybe they mostly consist of people who blindly support the cause because "hurr elves r dum" when it's more true that it's fighting for independence from the empire than that. Or am I not far enough in the game for that curiosity to be disproven and Ulfric's really on a power-grab?

The elves are supporting Ulfric in hopes that it splits the empire even more so that they can make it fall. Ulfric is just an idiot pawn. Also it isn't "blindly supporting" the empire, go actaully read up on lore and you will see the high elves are massive twats with the Aryan race mentality.

If the Stormcloaks and the Empire reached some sort of peace agreement, would some sort of defensive agreement between the two be enough to keep the elves away? If so that would allow both sides to rebuild their strength to fight their mutual enemy while more or less solving their political disagreements.

M-MUH LEGION!!
