I feel like the most they'll is do some post-release "balance updates" for characters, stages, and fixing bugs. Maybe they could also make some bonus event matches, kinda like what Nintendo did with Mario Kart Wii's tournament mode, where you can download an event and post high-scores/fastest times for a leaderboard.

Especially if characters like Ridley, King K. Rool, Dixie, Toad, Mewtwo aren't being included.

I'd be pretty worried if Sakurai was planning on releasing DLC before the game was even out.

If there was DLC, the most I could expect it to be is costumes. With the way stages have worked for the series, DLC stages is unlikely, and there's no way in hell they'd DLC characters.
They might put in DLC characters the same way PSASBR did, where they just release them for free later on.

I feel like I'm the only one who doesn't care about Pacman's design. It's as stupid as people complaining about sonic getting green eyes or blue arms.

They all look like Pacman to me. That's all I care. Every single character goes through shittons of stylistic changes, it's something you just have to deal with. Mario, Sonic, and Pacman are no different.

yeah obviously characters go through stylistic changes but that doesn't mean that we can't be disappointed that they went with a shitty generic change instead one of the other, much better-looking ones they already had laid out and available to use

They don't work with modern times, so they update the styles to look more modern and alive. For example, Mario didn't get realistic looking overalls until Melee, as well as getting blue overalls and a red shirt in SNES times. Sonic didn't get green eyes and look tallker/older until Sonic Adventure (I believe), Pacman, well, he grew limbs. All characters progress through time itself for getting a modern and high quality look. It just wouldn't really work with their 2-dimensional counterparts being in a 3-dimensional game. Mr. G&W is a different story, he looks that was for nostalgic purposes. Sure some people might not be happy with the changes, but they are just inevitable over time. I think it's more of a case of people looking through nostalgia goggles and believing some style looks better because they remember it being that way. But hey, to each of his own. I'm just stating my stance on this, not bashing opinions.

I kinda hate that concept art thing, it's just really obvious to me that they were planning on going with A no matter what actually won the poll. I faintly recall seeing B miles upon miles ahead followed by D, then C then A with a abysmal number. Poll then stopped being public and woah a suddenly had a surge of votes!!!
