While I might not be the best Yoshi main (I don't even consider myself good, tbh), I do know a few things that could help you on your quest. For rolls, try to jump after them OoS and nair them or D-smash them, if you can. Counters and air dodges are all about baiting them. How does a Yoshi do this? Why eggs, of course! Practice your arcs and aim with them to trick them. Grabs are also an option for all of these, but use with caution, especially the pivot version. You'll get punished hard for missing one. Again, I'm not the best, but hopefully this will at least help you an iota, if anything, in your quest of picking up Yoshi.
I think Sakurai could literally have written in his design documents "just make Little Mac as stupid and shittily designed as possible for a joke" and we still would have gotten something better than what he is now

He's just... not a good representative of his game at all. He's a highly offensive character who controls the flow of matches with his incredible power-as contrasted to Punch-Out where he's 100% reactionary and defensive and only able to pile the damage on by being faster and smarter than his opponent and hitting them a lot. He looks fucking angry all the time, which is nothing like he's always been characterized, he looks goofy more often than determined in Punch-Out, but they didn't even get the determination part right. It really shows in his victory poses, where he's dancing around and showing off, STILL with the stupid fucking death stare on his face. That's just not who he is as a character, he's supposed to be a loveable underdog.

We never see this Little Mac in Super Smash Bros at all.
Sakurai saw that he was a boxer, and tried to make what he thought a boxer would be like in Super Smash Bros. That would've been a good idea if he'd been adapting Bald Bull, Super Macho Man or Mr. Sandman, but the whole fucking point of Punch-Out is that you, Little Mac, are not a normal boxer, and you have to be twice as cunning and intelligent as your opponent to have even the slightest chance. Almost makes me hope my favourite characters DON'T get into Super Smash Bros after what he did to this one.
Thing is if you play a defensive/reactionary little mac he improves significantly. I mean yeah if you run in like a idiot and get punished sure complain, but his speed is mostly there to get you in there to punish with.
I don't mind his victory screens though do admit I wish one was similar to Wii where he's just pumped to have won.

That's still not his thing at all though. They could've made a lightning fast chip-damage character except instead he's fucking atrocious in the air and really good on the ground + an inevitable 1 hit KO move that rewards you for doing literally anything at all other then avoiding contact with your opponent completely. He's so one-dimensional and boring, completely ignoring the fact that he's a terrible Punch-Out rep. When half of a character's moveset is designed so that you never want to use it, something's wrong.
To start, how about this: Instead of KO Punch system, Star Punch system.
Land a certain number of hits or a certain amount of damage without getting hit yourself, you earn a star. If you take too much damage or get KOed with a star, you lose it. You can either use that star right away for a solid hit, or save it and try to earn two more for a devastating Star Punch finisher.
This rewards players who are good at keeping the pressure on as well as more defensive bait/counter ones, and it doesn't resort to building meter from losing. It actually requires SKILL.

Or they could just set the power meter up to work like it actually fucking did in every Punch-Out game it appeared in and make it build up when you land hits, reduce when you get hit, and not deplete when you use the charged punch
Using KO Punch instead of Star Punch still feels very strange to me, since the former was (IIRC) only in one game, whereas the latter was the core of both the NES original and the recent Wii game, making it much more relevant in both nostalgia for the oldest and faithfulness to the latest installment.
Maybe Super was the only one Sakurai actually played.

Honestly at this point I'm not sure what you expected from Little Mac. In his games he counters a lot and that's literally it. He has normal boxing moves and his only real claim to fame is he's a lighting fast guy.
In smash they aren't going to rotate the camera and turn it into a punch-out game. They made him fast, gave him a lot of ways to get in and out to chip away at enemies and he of course has a counter. Aside from him being grumpy I'm actually satisfied with how he came out, like consider the fact he is in a platformer/beat em up for a second instead of a boxing game, liberties are going to HAVE to be taken.

He has significantly less approach options than any other character because of the "stay on the ground at all times" mechanic/limitation. Of course they're not going to put the fucking camera behind him, that's not what i'm suggesting. Most of his moves (the one's you're actually supposed to use) have really high damage and knockback, higher than most characters for equivalent moves. There's a difference between fast movement speed and fast attack speed, he should be able to get hits in really rapidly and have a crazy combo/punish game with the tradeoff being he's light and easy to KO, as well as a lack of finishers, which is what the K.O. bar is useful for. As it is, it's just an especially ridiculous finisher on top of a character who can finish off opponents with pretty much every tilt, special, and smash attack. He has almost no combo game at all, air follow-ups are not an option for obvious reasons and most of his moves hit the opponent too far away to lead into anything else. There were ways to adapt the Punch-Out way of playing into Super Smash Bros and they didn't even try. He's a generic boxer character with a fat black guy on his victory screen.
That's taking it way to far dude, it just sounds like you're bad with Little Mac if you think he can't get in well. I hate repeating the udes name but check out ZeRo's channel on youtube, past few days ehe'd been running sets with a Mac he knows and while the Mac has trouble (he's going up against ZeRo's diddy and shit) it's not as one sided as you'd make it sound.

His approach is good, there's just not a lot of variety to it. You clearly don't get what I'm trying to say at all, it's not that Little Mac is inadequate or not good enough, it's that he just should be different because he's supposed to be Little Mac. I'm not saying anything about Doc, he's used appropriately. I meant by that that Doc's really the only thing that makes him feel like Little Mac.

When I was a kid and obsessed with Smash64 we used to play it in the playground. I was DK.
He was running up a hill towards me, I started swinging my arm, and then he got right up to me and I hit him, and because of our placement he went flying.
He didn't explode, he just hurt his back when he landed. I felt bad.
