Do they realize that the format has more than one instrument?

People often fail to realize that nearly all of the music they listen to probably uses MIDI is one way or another. Even Undertale does.

You don't need to play through the entire game again for the true pacifist ending; just reload your save and [sp]head back to the MTT Resort. Assuming you didn't kill anything during the neutral run, did the Papyrus date/hangout bit, and then did the Undyne 'cooking lesson' bit, you should get a call from Undyne.[/sp]
