AU usually means 'alternate/alternative universe', so you're were right to think of it as such.
I don't want Undertale 2. The game made its point, ended, and accomplished what it set out to accomplish. More isn't necessary.
...But if we had to have Undertale 2, at the top of my wishlist is improved difficulty across the board. Tougher bullet hell, more fiendish puzzles. None of the puzzles really had to make me think for more than 30 seconds and only two fights in the entire game can be considered difficult.
Also, the visuals did the job but they certainly lacked professional polish. Compare and contrast:

I think that more focused visuals would only improve the experience.
The soundtrack & sound direction and writing were top of the line there so those are my only criticisms.
I never really got 'But it ended perfectly, don't make more!' as an argument. Surely if they do make more, and you don't like it, you could just ignore it? In fact, the fact that it ended so nicely if anything is liberating because it makes it [I]easier[/I] to ignore later iterations if you want, as opposed to if it ended on a cliffhanger or if it was teasing plot threads being developed.
That's what I did with Terminator. As far as I'm concerned the series ended at 2 where it wrapped up perfect, and they can make all the shitty movies they want and the first two are still just as good. 'Cept I don't think Toby would make a shitty sequel, the dude's really funny, talented, and clever, and starting at a point where he has Undertale's essential foundation laid out and he's building on that, adding more depth to the mechanics and more story and characters, I think he can easily do a game that's just as good if not better. Besides, RPGs are a big genre and I doubt there's nothing more to deconstruct and reconstruct. It's up to Toby though, and if he ever thinks of something good to do with it, and decides to go with it. I'm hoping he does.
At any rate, whether it's Undertale 2, Undertale 2 but focusing on entirely different people and monsters, or a game entirely different, I hope Toby continues to make games. This guy is just too good to be a one hit wonder.
If there is an Undertale 2 or some similar game I hope we don't see it for some time.

Honestly, I don't mind Undertale's graphics for the most part. The beginning, Frisk's sprite and the Ruins in general just sort of felt like it intentionally tried to bait you into thinking it's another NES retro RPG kind of thing, and then you get SNES-style stuff followed by what sounds like a real piano.
It's the fact that Frisk looks like MS Paint the entire rest of the game even as the monsters have a more consistent style and the environments get more SNES/GBA-y that bothers me.
I don't want Undertale to be another FNAF. Releasing games out the ass only to get money because of its brand.

I hope whatever Toby does he can navigate the traps that guys who make one insanely good thing end up in.
I don't want Toby's entire career in anything post-Undertale to be trying to live up to Undertale. I don't want whatever he makes next to be compared to Undertale disfavorably not because it's worse but just because Undertale came first and holds a rose tinted spot in our hearts.
But I think he'll be fine. Toby's got a huge amount of good will directed towards him, in the sense that fans care about him too, and not just the thing he made. And I think like Scott Cawthon, his fans will support him with whatever he decides to do.

So after watching [sp]the genocide run[/sp] again (yeah I'm a fucking monster blah blah blah), I realized that [sp] Flowey actually tries to save the world at the end. I always thought him killing asgore was to prove he was useful to you, but he kills asgore's soul to stop you from getting out of the underground, and it sorta works. Chara can't get out, so instead he simply destroys everything as there's nothing left to kill and uses you to hitchhike out of the underground during a pacifist run. [/sp] That's kinda ingenious.

To be fair, I think the visuals in Undertale get waaaay better after the Ruins. Not as good as some of your examples, though.
I kinda like the visuals, but honestly they never really mattered to me either way I was too enthralled in everything else going on.
Not that it would be a bad thing, it's just the last thing that I cared about while playing. I guess it kinda shifted my focus more towards the sound/music and narrative which has been stuck in my mind ever since, it kinda allowed me to use my imagination to fill in the blanks for the "bland" graphics.
I'm not sure if that makes sense, I could probably explain this a little better.

The Ruins looking that way was totally a style choice. There was a (somewhat) complete sprite sheet done for it but went with the old look for a reason (Woah shocking facepunch exclusive here's a unused sprite)

Just unsure if it's the same situation given the fact that these unused sprites aren't in the game in any capacity.
E: The HD Ruins stuff isn't in the game, buddy did a lot of touched up things that didn't get used and that's just one of em.

Toby's rule was to wait for the context to be found for sprites before posting them IIRC, and i'd imagine that doesn't apply here since they're completely unused, similiar to the unused [sp]omega flowey[/sp] concept and alphys' lab concept.

As for putting them on TCRF, I don't think they'd belong there (at least not on the main page) since TCRF mainly details unused stuff that's still in the game as far as i'm aware.

Just curious, so what was the reason for the style choice we did get in the ruins?
I really wish there was a Snowdin Steam background and of the other places as well. Like Hotland and Waterfall instead of just the Ruins.

The backgrounds could have been a lot better imo, but then again a lot of the good possibilities would be spoilers so..
