Ashran is unplayable because of the sheer amount of people in the Zerg. My screen will display 30 or so enemy units but there'll still be a dozen or so more who haven't phased in yet

Or more like, what are the good or fancy interface addons that exist for this expansion? I kinda want to try out something after like 4 years having the default action bar and health

I've always used the stock UI but now I've changed to ElvUI I wouldn't look back. I fully recommend that.

If you aren't a healer I highly recommend you get shadowed unit frames (It'll do your unit frames, and raid frames). If you are a healer I'd use Vuhdo for your raid frames instead (can keep using shadowed for unit frames tho), it's a bit tough to set up, but damn is it powerful.
The reason I like shadowed unit frames is that it's pretty good right out of the box, and really doesn't take much effort to make visually appealing and functional.

Some other addons I'd recommend

Dominos/Bartender4 - They're pretty similar. You could probably replace my dominos install with bartender without me noticing. They're there for your action bars. A pretty big benefit over using these over default action bars is they make things much more compact and clean, and they also make keybinding a hell of a lot quicker and easier.

Gnosis - It's a pretty neat cast bar addon. Really handy for PVP and raids, since you can make big obvious cast bars for your enemy, which let's you read and decide to interrupt or not quickly.

Weakauras/Tellmewhen - A bit tough to set up, but very convenient addon for tracking your shit. Like debuffs and whatnot. Tellmewhen I hear is easier to setup, but I wouldn't know, weakauras for life.

Those are a few for functionality I guess. If you want to make things look neat look up sexymap, raven, and chatter.

Honestly I just can't fall in love with Elvui, I've tried. I used Goldpaw's UI back in MoP and despite it changing during Warlords I still use it, it has its drawbacks now like still not being able to move action bars but I always go back to it.
