I think it just means that ships are capable of moving freely through space but there are hyperlanes that you can use and using them exclusively means you only move on existing paths.

So the situation in Spain is getting pretty frustrating. The area is pretty much now split half me, half Muslim nations. I can't declare war on any of them, for any reason, it seems, without all of them ganging up on me. Any ideas on what I could do to get around this?

Just wait it out for now, if you can, or use "sow dissent" with your advisors.
Or, alternatively, fabricate claims to take counties from them. They won't have the religious call to arms of a holy war so it'll be 1 on 1.
The Reconquista is really difficult from the 1066 start date since even though the muslims are divided they will react uniformally in the event of a holy war.

I tried to make it through that with the intention of dying as soon as I possibly could. I threw myself at battles, even ones that I was at a disadvantage in, in the hopes of dying. My vassals all hated me but didn't do much beyond form factions, nobody trying to just kill me like I hoped. In fact, things went strangely well. The Pope lifted my excommunication and I gained a ton of new territory. It all came crashing down though when three fucking rebellions started, and the HRE declared war on me. I knew it was all screwed from there, so I reloaded. I've been going pretty easy on the save scumming because it's my first time around, and I figure some breaks are in order to learn the game properly and see what's possible.
After reloading and [I]not[/I] going crazy homocidal, I won the territory again, formed a new kingdom, and made some pretty good progress. I lived to like, 66 or something like that, until I caught great pox. I read a book which wasted my time and somehow gave me the option to become depressed, so I cunningly took it, imprisoned and executed my two younger sons and then committed suicide, sparing the nation any consequence at all from my actions.
The Spanish Peninsula (I have no idea if that's what it's called but whatever) is mostly rid of Muslim nations, and it's coming down to me and Barcelona. Barcelona is an independent, small duchy, and the only thing in the way of me forming Hispania, but the problem is that I have no way to absorb them that I can tell. They naturally refuse to be vassalized, they don't share blood with me, and they're just sort of there, chilling. Dunno how to declare war on them except the slow, toiling process of fabricating a claim on each individual county until I can usurp a title, which could take [I]years.[/I]
I also have no idea if I'm doing well or not in the game. It's around 1160-1170 somethin', and like I said, nearly unified Spain. It's also hard to tell directly how powerful I am. I have no idea if I'd fare well in a war with France, England, or the HRE, who I sort of see as the big three, nor how to go about conquering them in the first place. My goals for the game are to unite Spain and form Hispania, and conquer at least one of the big three powers, but I'd also like to not have to wait a thousand years for my chancellor or whatever Councillor handles that to fabricate claims on Barcelona.

You should be able to form Hispania without just one duchy. Once you do form it you should get a claim.

I think it might be multiple? I'm not sure. I've been very focused on the muslims to be focusing on Barcelona. Plus it's a little weird trying to figure out all the duchies and territories and what does exist and what doesn't as a beginner.
Oh hey, that reminds me, is there a way to fabricate claims on higher titles than a county? I've noticed NPCs trying to fabricate claims on entire kingdoms, but I don't seem to be able to do that myself.

You can fabricate claims on higher titles through plots if you are already a part of the realm in some way. Also forming an empire just requires two kingdom titles and having 80% of the empires de jure land.
If your chancellor is skilled there's a chance to fabricate a claim on the whole duchy instead of only the county iirc.

It's best to fabricate the claim and then immediately try to sow dissent. If you do that, vassals of the enemy may not raise troops, or sometimes outright revolt and let you step in
