I think you could rotate the camera, i just don't remember much, but i'm pretty sure it had infantry, and i'm just mentioning the possibility of an RPG, but i don't think it is

So, there is this old DOS game from early 90's I think, top down view. You are some sort of a miner, you go through soil/rock to try and get gold items, while using explosives to break through layers of rock/hostile entities that would be spawned on the map. Between levels there was an extensive item shop. I also remember there being at least 2 player deathmatch mode, where you could buy automated mining bots that would explode if they ran into your opponent.
There was this online-only shooter that got its servers shut down a long time ago.
The gimmick of it was very common, it was a celebrity deathmatch and the games were casted on television, in-universe. I seem to remember you were able to dress yourself up as a Gene Simmons knock off.
I'm not sure but it might have been a PS3 exclusive

There was this game, I -think- it was from the PS1, sort of an action-platformer with some exploration elements. You're in like a zeppelin(?) and you either run out of fuel or need some spare parts, so you have to find more.
One peculiar thing that always stuck in my head is that if you died, instead of starting over you would switch to another character
Looking for an old PS1 racing game. I think it had power ups but I'm not sure. Its theme was cool, a bit dark but not too dark, the cars had rad designs and I think they also had monster themed looks (though I might confuse it with another). Cars were also not realistic, more like a Mario Kart with monsters as cars. Very hard to describe.
Old 3D helicopter game where you controlled an Apache. I think there wasn't a save function is singleplayer and you had to go back to first mission when you failed. (3 lives or 1 life, not sure). You started at base on first mission and was instantly attacked by two helicopters. You had to shoot towers with guns on them, other helicopters and ground vehicles like tanks. It also had multiplayer with multiple maps. There were pickup objects in multiplayer like speed-up, damage-boost, etc. (Not sure about pickup effects, just an example).
Played this game on PC, might or might not be available on other platforms.
There might or might not have been word of "Extreme" somewhere in game title.
I think it was a japanese psychological visual novel for the DS (could be wrong though) never played it just read about it somewhere, The story was about a group of people that were kidnapped and everyone was given a single card with an order (no one knew what the cards of the other people said). To escape they had to do what the card told them, some orders were simple like be with the guy with X card, and others were shitty like "kill everyone else" or "kill the guy with this specific card and steal it"

A very old game that was in a bootleg playstation (polystation i think?) it was 3d, third person and was pretty much a multiplayer game, you could shoot each other with a lot of different weapons, that's all i can remember
I've been searching for two very specific things for quite a while now. I've seen or played them both when I was around 6, so I don't remember their names anymore.
The first of the two was a strange FPS where you started out in one of two (possibly three) locations. One was a gray, moon-like canyon place with some industrial structure in front of you, the other was some sort of dark factory, where there was a dark corridor, lots of pipes running along the wall on your left ending with a metallic door. I distinctly remember never making it past either of these starting points because something would usually kill me really quickly.
Additionally, the game must've been released before 2001.
I only saw the second game in a bundle of previews. There were four previews in total in that bundle, and for 3 I already tracked down their respective games. As such I'm only missing the fourth. I'll first try to describe the other previews, if perhaps someone remembers them:
The first one was a demo of Starcraft, with the player playing as the Protoss. He would send a bunch of Dragoons up to the north but I sadly don't remember much more than that.
The second one was a demo of the first Thief game, where the player climbs down a rope at the start of the Bonehoard level and immediately gets his ass whooped by a zombie.
The third game might have been a Dungeon Keeper game, it was an top-down perspective game with some sort of torture mechanic.
And now the fourth one:
I remember that the preview started out in this gray underground area. The game is an FPS, and as soon as it starts, the player moves forward, looks to the left and sees some sort of hulking monster coming towards him. He pulls out a chaingun/minigun and kills the beast with considerable effort.
Oh yeah, and the game was fully 3D from what I remember.
For a long time, I was wondering if the game even exists, or if it wasn't just some sort of pre-rendered video. But since I found the other three game associated with these previews, I am convinced that the fourth one also has to exist.
Judging from the release dates of the other games, the fourth must've been released around 1997-1999.

Both of the FPS games you described reminded me somewhat of Chasm: The Rift from 1997. Very obscure, as well as being grey, bleak and sort of homogenous.
I played Chasm around that time as well, but it's definitely not either of those.
The only way to really identify the second game would be to find that bundle of previews again. I know I saw them in association with some Windows 98 utility/settings menu, probably related to a graphics card or sound chip. It had this purple, cloudy background when you opened it, with a loud thunder noise that also played during system startup.
God I wish we didn't throw those hard drives away.
there was this game I played when you launched the game it was kind of like a briefing area, it had a projector. you played as a solider, it was 3D, it was set sometime in world war 2 i believe as it the garand, and there was a whole campaign. the graphics were very old, does anyone know?
i played it on PC, and i played it on windows XP if that helps.

Update on the second game: I finally found the source of the videos that I saw some 15 years ago, they were inside of a SoundBlaster Live! demo program:

Turns out the game I didn't recognize/ couldn't quite remember was actually Unreal, which I already played some years ago. Still it's great that one of my childhood mysteries is finally solved.
I still can't find the other one though. It's most likely not an FPS, and actually something more in the direction of a survival horror/ stealth game I think.
played this as a young kid a long ass time ago, its a free online game that was multiplayer/mmo-like medieval game and the knights that you played as were all a certain colour. as in some would be very red, some yellow, etc. i remember there being merchants and such to buy better gear. it was played from over the shoulder perspective. i think the helmets worn (least by default) were barrel helms.

Played a game a long time ago, only things I can specifically remember was the tutorial involved a stealth section, and the game had this weird mechanic where you saved using a item, but when you did the item(think it was a crystal) made a big flash of light that alerted nearby enemies.

okay, this is gonna be difficult to track down, but I remember renting this game for the PSP in either 07' or 08' (It was like a week after I got my psp 2000). So it would've been an earlier title
3rd person perspective but almost top down, RPG/hack n slash type game with a standard medieval setting. I think I remember there being an aspect of a safe city while going underground to fight, I also recall seeing at least 1 TV ad for it so it had to have been a larger game.

Trying to remember this old PS1/2 era military game, all I remember is being able to pick a small team from a helicopter, and touching any sort of vehicle resulted in death. It was thirdperson as well.
