So I tinkered a bit with Mass Effect 2 and its main ini configuration file and started the game all over using a file save editor to bypass Mass Effect the first. I also decided not to use the editor to gain squad members before the proper time (given I'm a sentinel, Garrus and Kasumi, whom you can recruit fairly early in the game, are two excellent choices for my character). Given the game itself lacking the option, forcing it via tool brings issues

In my CPU's defence, that was one hell of a heavy super AA

I hope Mass Effect 3's weapon and armor customization comes back.
I think we'll see that come back but in even more depth to be honest, or at least our armor.
Mass Effect and Mass Effect 2 Digital Deluxe Edition are on sale on steam for €7. I'm thinking of buying them to replay the games on the PC, and buy ME3 on Origin once I've beaten them. Here's the thing though, I already own them both, I just don't know where the disks are. Should I buy them? Should I just let Mass Effect remain a bitter sweet memory?

Not only are the games painfully cheap, but you have a desire to play them and the disks as you said are lost, and I also assume the console versions, which are not nearly as good as the PC ones. Spend your money as you please, not only is it petty pocket change but if its what you want, who cares? Its like eating a food you like only once, it makes no sense.
I'm tempted to romance Miranda over Tali. Tempted, not inclined If there is something Mass Effect 3 did right was to make Miranda a great character in her own right

To my knowledge you can simply add your copy to Origin, if I remember right. I also am more than certain you can port your saves as normal.
Yeah I have me1 and 2 on steam and going through all 3 games I had no trouble carrying the saves from 1 game to the next. I'd assume many people are in the same boat.

I honestly can't imagine a new character having a new line like 'in the middle of some calibrations' or 'still totally worth it'. We're getting new characters, new stories and a new place and all I want out of it is it to be as good as what came before.

All I know is that my Renegade Shepard romanced Miranda specifically to woo her away from Cerberus. A lot of Shepard's actions in 2 make way more sense if you're roleplaying a morally empty, pragmatic bastard.

Extended Cut doesn't really make it better, it just makes it not as broken.
DLC is decent when it is comparable to the old Expansion Packs. And meh, the ending is not as bad as the fandom pretends. Could be far better, but "no we want to save you from Dark Matter", as it was originally intended, isn't better per se. If the Leviathan were in the vanilla game, it would probably be recieved far better.
