There's a massive pack of better textures for ME1, the [URL="http://www.nexusmods.com/masseffect/mods/1/?"]MEUITM[/URL]. I've been using it a lot, I think there's a normal and light version. Easy to install, but can cause hud glitches after playing for a while. You can just ignore them or alt-tab to fix them temporarily.
This is probably a good point in the thread to ask if there are any other good mods for ME1/2/3 other than HD texture upgrades. I'm going to replay the trilogy soon and I was looking for some oomph to jazz up the experience.
I like the hybrid ammo mod for ME2. It makes it so that when you're out of thermal clips it goes back to the cooldown system ME1 had. It's about halfway down the page [url=http://www.masseffectsaves.com/coalmods.php]here[/url].

Its entirely fine. As others mentioned he should look into a fix for Garrus' face texture. Beyond that? Nothing special to report besides the occasional technical issue that I've had here or there.
Honestly its the best version of ME1. Smooth 60fps with clean graphics, fast loading times, better mako control and inventory. A few small issues that are fixable is a worthy trade-off.

I didnt know this was a thing. I'm really happy it is though because its similar to what I always felt the ammo system should have been in ME2. My idea was always instead of having individual rounds, you just get at max 5 or so heatsinks for a gun and with the heat sink it works just like ME1 except if it over heats you have the option of dumping it and replacing it with a fresh one, but to make that a more appealing choice the cooldown times would be slightly longer. That way you have to decide if you want to waste your limited supply of heatsinks on a quick reload or if you want to wait out the cooldown and save them.
IIRC that's how it was for a while in early videos but they changed it for some reason then just went "uhh they had to remove the heatsink to make room for the thermal clips!!"

For ME2, there's [URL="http://www.moddb.com/mods/better-me2"]Better ME2[/URL] but you should check out the changes and see if that appeals to you.
ME3 is the one with the most mods. [URL="http://www.nexusmods.com/masseffect3/mods/350/?"]EGM[/URL] is a must-have (imo), and I also like [URL="http://www.nexusmods.com/masseffect3/mods/412/?"]Back Off[/URL]. I'd also recommend [URL="http://www.nexusmods.com/masseffect3/mods/411/?"]ME3 Recalibrated[/URL]. Now to go with that, you can add a few content restoration mods like [URL="http://www.nexusmods.com/masseffect3/mods/173/?"]this one[/URL] or if you're really fond of Thane, there's always [URL="http://www.nexusmods.com/masseffect3/mods/180/?"]ThaneMod[/URL], and finally, there are a couple mods to change the endings. None of them are truly satisfying in my opinion though, but you gotta admit the [URL="http://www.nexusmods.com/masseffect3/mods/66/?"]MEHEM[/URL] tried the hardest.

mass effect is just one of those games I never really even considered modding

Some you have to replace files, no problem. Some mods for ME3 use a "DLC-like" system, where you only have to add them to a folder. Some mods however, may demand a bit more time and effort... But usually it's easy.
So I booted up ME3 and got like 18 million credits from one bronze match, I suspect some tomfoolery on behalf of one of the other players was involved. Do I run the risk of getting banned or is there a way I can contact support and get it all sorted out.
I spent 2 mil of it already on some reserve packs but my conscience kicked in, can I like ask to have the items taken off me or is there little to no admin staff left for multiplayer.
No, they don't care. There is no automatic system and its done by a person who to my knowledge (no idea who in specific) has left to do other things.

So my brother's now got an Xbox One and he is getting the backwards compatible versions of the 3 ME games on there. But it seems he doesn't have all of his DLC, just initial purchase bonus stuff. The usage stuff on the 360 says 'only usable on the first system' and 'usable via a memory unit or other storage device and access to Xbox Live to verify them', but i'm trying to figure out if he should or shouldn't have his DLC. We found this problem on ME2 specifically, he hasn't installed 1 or 3 yet since he's not sure if this will happen to all of them.
We're both ready to blame EA at the slightest provocation.

If I remember right you need to redownload the dlc from the market place

I'm pretty sure the "You can only play on the original xbox" thing is a Microsoft limitation. It's just so if you have the DLC installed other accounts can use it as long as it's the xbox that's 'owned' by the account that bought the DLC. If it's on your account you should be able to access it on any xbox, but you may need to select it from the marketplace separately.

I gave in and bought all of 3's story DLC this time around but was very unhappy about having to do so at full price when everything else on Origin was on sale
