Also just got home to find I got my 3rd Medal (150 stars). The level limit is such a non issue so far.

How does the game control? Does it have classic NES Super Mario controls, where Mario feels super heavy with a lot of inertia, or is it more fluid (and, I think, better) like in Super Mario World?

It's just New Super Mario Bros. with retro skins, pretty much.
Hah, if you build a trap that blocks Mario from exiting a level after beating it, he eventually stops walking forward, turns around and crouches.

the "don't touch anything!"/"just walk forward" levels I've seen have like, 40-60% completion rates, so I wouldn't take it too hard

Makes me wonder how some stages even get uploaded on expert. I swear I think there are secret paths that are put into them so they can complete it and upload it.

Completion rating. If it's got a high rating then it's easy, if it's middle ground (usually freshly uploaded stuff) it's normal, if it's got a low rating it's expert.

Oh, that's because they are. They either make invisible block paths, leaps of faith near the beginning or have so many pits pointing at them that actually are traps that they assume you won't try to find the one that actually works.
