Go with native warband first, play for a while, experience the different things
Recruitment of villages, a tournament, be a lord type guy and get in a couple of large scale fights
When you think you've got a solid working on how the game functions and what you can do download Floris
It's a huge ass module but it reworks the flaws to a really nice sheen
But start off basic before you get anything

genkokujo, star wars conquest, a clash of kings, last days of the third age, and one of those western mods (i think it's 1866 frontier).

1866 and Star Wars conquest for M&B, for Warband I think Brytenwalda, Blood & Steel, 1257 AD and stretching it a little, maybe PoP. Anything that has the Freelancer plugin is like a seal of approval for me.
I hear Viking Conquest (dlc successor to Brytenwalda) is pretty shitty and lacking some of the things like Freelancer so I never tried that. Blood and Steel is fun(ny) if you just want to screw around and become a King in the first 5~ hours of starting a game as recruitment/building a decent party is far less time consuming and your party cap is pretty high no matter your leadership. There's an option where you start with superhuman stats, a sword, and nothing else which is pretty amusing. That said, the earlier versions were a lot better because there wasn't any of the thousand strong skeleton death hordes like you see in PoP, which I think is that mod's biggest flaw
Native Expansion is a good base to start off if you want to keep a relatively Vanilla Warband experience. Also get a battle sizer so you can increase battles to more than the max (300+will crash the game so limit to like 299 and you're golden) and you'll have some good times. I logged my most hours in MB:WB playing Native Expansion.
Brytenwalda's pretty good but early on you'll get your snot whipped out
I like floris the most as far as expanding vanilla goes
Brytenwalda adds a lot of cool stuff and a lot of bullshit just for the sake of fucking you over, like your character forgetting how to walk backwards without falling over every two meters because realism, apparently. And none of it affects the AI either
Floris is sorta dead, isn't it?
If Silverstag is still updated, that was the much cleaner mod in the same style by one of the main devs of Floris that was actually updated.

I have it since I backed them during the cRPG days. The game is at a very early stage right now so don't expect many features. However the combat is fun and you get a grip of it fast if you played m&b.
My verdict is currently to wait if you're expecting a full game.

That's good. Before it used to explicitly state that anything 300 and above would crash the game due to engine limitations, I pushed beyond that a while back and it did so ever since then I've kept it at that.

You're going to want to put some points into all your weapons and put at least two points in shield even if you don't use it, nothing makes you panic more than accidently dropping your main weapon and having to quickly walk around the battlefield looking for a replacement
And your horse riding skills too.
Early on the horse can get taken out fairly quickly so it's good to be able to have the ability to quickly mount another one just in case.
(if your horse dies mid battle don't worry you'll get another one at the end. So don't be afraid to dismount)
