Just get over it (with Bennett Foddy). It's cheap, easy (mechanically), fun (subjective), and will keep you busy for days :) There's also multiplayer so you can spend time with other people.

whenever my internet goes down or something shit happens I always go back to open transport tycoon deluxe. Easy to pick up and play, but with enough mechanics to it to make sure you can have fun for hours building enormous and autistic transport lines. I remember when i broke my finger and i couldn't use my keyboard hand, that was back when i was playing battlefield 2142 I bound right mouse to move forward, middle mouse to use, thumb button1 to aim, mousewheel up to jump and down to prone, and thumb button 2 to cycle weapons. It was hell but I could get kills at least, mostly with snipers though
You could play any Smash Bros with the c-stick/right stick bound to movement and preferably claw grip.
Superflight is basically a game where you wingsuit through procedurally generated worlds and get points the closer you go near hitting stuff. It's on sale for $1.49 right now, it only requires arrow keys.

If you are still looking for games, try Risk of Rain: [url]http://store.steampowered.com/app/248820/Risk_of_Rain/[/url] It is a 2d rogue-like platformer that you should be able to play with one hand with rebound keys and it has online and local co-op. It is also quite replayable as you unlock new weapons that will drop in subsequent plays. It also has a bunch of characters with different abilities to unlock.
Just wanna say Bayonetta 1 and 2 come with a literal "one handed" mode

Well Eurotruck is more of a personal taste thing but I stick to it with the others.
oh, that's bad news. I don't know about any better method which will work better as an opposite hand.
