Morrowind's fun for how fucking busted it can get and the fact the magic menu is legitimately the best in the series (small, easy to select from, simple and doesn't require a fuckton of clicks to get to a spell, also lets you delete spells by default), but actually casting spells is cumbersome and I personally don't really like the concept of failing to cast spells. In my opinion there's something really satisfying about bonking someone over the head so hard with a mace they collapse onto the floor and struggle to get back up.
So, currently I'm stuck playing skyrim on the PS3, which is a pain that goes beyond the physical world But on the other hand, it takes me out of the Bethesda Mod cycle of "mod it, till it breaks" So I've tried to complete the DLC, something I've never done in all my thousands of hours of playing. So after having now completed the Dawnguard DLC I am happy to report that I found it tedious and frustrating as all hell but beautiful at the same time. Trying to navigate the soul carin was like pulling teeth, and the pilgrimage bit was a fucking nightmare of Falmer bastards that drove me insane. But once you get to the forgotten Vale it made me so happy because it felt like I was actually playing a true TES game again. It felt like OBLIVION. fuck Sarena. Dawnguard for life. Gargoyles are cunts and huskies are best companion. That is all
Now you know, now you know. Now you know the pain that fuels my every rant against Dawnguard.

I really liked the Soul Cairn. Sure, it was hell to navigate but it actually felt cool. Reminded me of finding Blackreach for the first time.
the soul cairn and the forgetten vale are cool but they could have been a little cooler maybe? like the soul cairn was empty cept for juib, that merchant dude, and the reaper's lair but i guess that fits the purpose of being an empty, cold void the forgotten vale was neat with the unique deer and sabre cats but a little too linear
So I got Skyrim for the Switch. So far, it feels more than adequate, but there's some oddities; I can't tell whether it's just normal Skyrim shenanigans or if it's the port. Examples include aggro'd enemies dropping the chase and forgetting about me because I assaulted them indoors and then went outside, hostile music playing when trying to approach a quest-relevant NPC who then refuses to interact with me until I leave and come back, bounties not disappearing after all witnesses are killed, etc.

The Soul Cairn was too controlled but at the same time there wasn't good control. It had a lot of cool looking buildings that you either couldn't properly explore or turned out to be completely barren and disappointing. At the same time you were boxed in and the cairn was segmented so you had first area, second area, that place with the dragon, and then there was distant shit barriers stopped you getting too, so it really didn't get to be that "empty, cold void" forgotten vale wise, blackreach p2 was nice. The glacier was excellent, but that has another problem where I'm just fucking disappointed that this kind of landscape wasn't in the original game, that battle with the lake dragons was a marvel and could've been so much more if bethesda had created pieces like that for the standard game when it could've happened more than once with more than just dragons. (note: those volk vampires were said to sleep under lakes and snatch people who cross the surface in [I]Immortal blood[/I] and we all know the nords need sea monsters.) There's this weird thing with falmer in that "the betrayed" got an upgrade and were more diverse and had cooler things, but the "snow elves" as a whole continue to be a massive disapointment; The Architecture was uninspired, the Armour looked ridiculous, and the story of the survivors utterly failed and they looked [I]wrong[/I]. They were pale altmer, the worst kind of elf, 0 effort.

Soul Cairn are pretty damn cool. But its really fucking frustrating to track down Jiub lost pages,or those reaper crystal.
Restarting oblivion, I currently have a super stable mod build from all the tests I've done which is a fucking first. Question now though is should I add MMM? I've used it before years ago but is it really worth it? I currently have OOO installed as well.

MMM's quality varies heavily and honestly I'd vote against it. If you want a more consistent and vanilla experience then don't because a decent chunk of the new creatures are obviously from the mod, but if you just want more stuff then go for it.
Speaking of monster mods I appreciate Mihail's efforts to put all sorts of new entities/monsters into skyrim but holy mother of fuck are a good 90% of them the ugliest fucking things I have ever seen. Question, if I made a mod for another game, based in Tamriel, Where armour and weapons were largely really mundane, in the sense that there's about 30 sets of armour below steel full plate (like let's say Full plate protects 60, Half plate is around 50, scale and hauburks at 40, lighter chain at 30, padded outfits at 20, and a bunch of is put around there) and then I put in materials as simple modifiers, so an elven scale might have 110% protection, 70% of the weight and be 300% the price, which would keep it cheaper and less protective than steel full plate.... Would I be breaking the spirit of TES? Like daggerfall and morrowind were way more reasonable about weights, but armour's always been tiered in a way. Weird note but In daggerfall steel and daedric have 1.25 weight modifiers for weapons, making them the heaviest. Everything else is lighter at 1 or .75, with ebony no less being the lightest at .5 the weight.

ESO has a similar (thought not really) system to what you describe but even that goes out of its way to make armor look distinct.

Like would it blow minds and cause fits of rage if an ebony outfit was less protective than a dwemer one, if the dwemer one was more encompasing/better shapped and so on.
Wouldn't blow minds but you'd have to do a pretty good job at conveying how that system and logic works. A lot of game design has to do with player assumptions, and right now most elder scrolls fans are familiar with the concept that ebony armor is typically more protective than dwarven and will assume so unless told otherwise. If you don't then expect a lot of people to complain about lore inconsistency.
