Inception's extended climatic sequence was pretty amazing. The climax to I, Robot was pretty awesome as well, even if I did just read the book and the film basically borrows character names and none of the plot (for example, robots are illegal on Earth in the book, and half of it takes place on Mercury and in outer space).
It was mentioned in the OP, but the baptism scene in the Godfather was simply genius.
Also, obligatory mention of Inception.
In Monsters Inc, i was hugely surprised when the CEO turned out to be working for the villains.
Man, that was a huge turning point.
I don't care what people say, I loved the fuck out of this movie, and the ending was AMAZING.

The Heavy and The Town both have good climaxes too.
The last fight of District 9 was fucking intense as shit. I didn't go see it in theaters, but when I saw it I shat myself multiple times.
I always save an extra bag of popcorn, if you will, for the final showdown in Episode I. Say what you will about the movie it's a damn well put together ending.
Silence of the Lambs had one of the best ending scenes in cinematic history. The music, Hannibal's escape and Clarice all combined to make it so.

Little Bird strafing runs in the final sequences of Black Hawk Down, Carentan in Band of Brothers, and the lobby scene in the first Matrix. Surprised that one hasn't been mentioned yet.

Oh god that movie was so disturbing.. Liked it a lot though. It gave a pretty negative view of the whole thing though, worst case scenarios.
Usually it's all about having fun, like in one recent Finnish druggie-film (Where the injections weren't faked) they were just "having fun" doing drugs, even though they were just looking ridiculous, unhealthy and just plain fucking stupid, they made it to be fun to them, but from our point of view it's exactly the opposite. Is it fun to lie in a hotel room bed watching cartoons smoking cigarettes while blown out of your mind with heroin?

These aren't climaxes. In Black Hawk Down, the climax would be the "Mogadishu Mile" (when they leave the city on foot). The Carentan episode itself of BoB doesn't constitute a climax, but the point in the episode where Easy Company is about to get overrun, to be saved at the last second by the Sherman tanks, is a climax. In The Matrix, the climax would be Neo fighting the agents at the end, not the lobby shootout.
For me, I'll say the climax from Jaws... "Smile you son of a bitch!" Nevermind that the tank probably wouldn't explode like that, I wanted the shark to fucking die. I still don't like swimming in the ocean because of that movie.
Probably the entire last hour of The Matrix Revolutions. It felt like the entire series had been leading up to it.
It's also rather ironic, as one of the main critisisms of that movie was being anticlimactic.
