They had been cooking for a while before I took that picture so that's probably why they look white to you.
Just to clarify, the stuff wasn't floating up in the water it was on the chicken itself, is that normal? What is the white stuff anyway?

It's probably fat or fatty substances that were released from the chicken. When you saute chicken or grill chicken this is what causes the juices and such. Just cut it off or remove it. Not sure why you're cooking chicken like that tho sautéing is like 1000x better.
Got grades back, managed to pass chemistry even after my 0.5/4.0 effective first test, passed math I failed, and got a 3.0 in new math. I've never got a 3.0 in a math class before, and I now know that I could do even bettererer. I still have to take an extra year in Uni, though. Not too fussed about that, it actually sounds nice to be able to ease throttle off. And considering that the lowest I'll make with my degree is 75k (up to 150k+), loans aren't a problem since I'll love my job so much as is.

Its just fat, chicken still has some fat but not as much as other meats, when you poach chicken it causes it to raise to the surface but because its more dense than water, then it just sticks to the outside.
If you were to grill or as paindoc said, saute instead, it would just drain out or get sealed inside.
Personally I wouldn't poach chicken, I prefer to grill it or fry.
I just got three of my wisdom teeth taken out.
Followed by bleeding all over my pillow overnight
and for some stupid reason I completely forgot about my painkillers
Ehh... Now the pain isn't all that bad though. It's just a dull ache.

Had the same experience after I got 3 of mine removed back in the summer. One of them went up when I came home, where I nearly fainted of the amount of blood.

Poaching chicken is useful if you need to shred it for something and don't want any crispy bits. Shredded chicken breasts are an ingredient in the enchilada filling I make
All jokes aside, my family has a history of bipolarism and I unfortunately got hit with a bit of it. It's not fun. I can go from zero to flash in a matter of a second and I have awful mood swings. I wouldn't wish it on anyone.

I am the same way, I just fucking lose it.
I have such strong anger problems in actually prescribed Valium to shut me down when I feel it coming. I've got a bottle in my car and at home with it. When I get angry it gets very dangerous very fast.

Preference thing, but it does preserve more of the texture of the meat. Does better with flavoring and marinade. Here's my usual super quick sauté procedure/recipe:
- marinate chicken for at least 30m in a mixture of 1 part lemon juice to 2 parts olive oil. Add rosemary and thyme to taste, or other spices you think would pair well
- when ready to cook heat up your nonstick pan (or cast iron if you're fancy) with enough oil for the chicken to sit in. The oil will shimmer when heated. I usually use medium-high heat
- add the chicken to the pan, and don't disturb it. If you pull the chicken and it seems to "stick", let it sit. The chicken will lift easily without tearing when it's ready to flip. This takes up to 5m for thick chicken breasts, and sometimes as little as 2-3m for thin slices
- flip the chicken and do the same for the other side. Once the other side is crispy, it's time to deglaze the pan. Add a tablespoon or so of water, wine, or beer if you like. Lower the heat to medium-low and cover, letting the liquid cook for a bit. At most 3m in my experience.
- your chicken is done once the inside reaches 165f. Past this it will get overcooked. This process takes practice, but daaaamn it's good. Whatever is left from the deglazing process in terms of liquid can be used to saute vegetables in, or poured over chicken. Last step is to get chicken, put it on a plate and cover it with aluminum foil for about 3m
My favorite is using the glazing "sauce" to saute my veggies in, since it gets the flavor of the chicken. I then combine the remaining sauce with A1 usually to get sauce tied to the flavor of the whole dish.

Searing seals in the juices, so that's what you're doing in the first part. It crisps up the outside, so that's why lifting before it's finished is so bad.

Yeah unless you want to get ridiculously ill. I just roll and shake all the marinade out of the bag I used and then immediately toss it. It's always fun trying to do all of this with contaminated hands :v:
