The body retains water when there's too much salt and not enough water is coming in to balance it out.
Also, the OP is going to simply replace all the things he would usually drink with water, and most of the things you drink are already over 90% water in terms of liquid content. Therefore, there shouldn't even be a change in the amount of water he gets, but he will get less caffeine and less sugar.
