Update:
Haven't tested fuel yet (that's next) but I tested the connection (green barrel plug) that goes to the ignitor (and thus to the coil) from the main harness and it's not getting any voltage on the multimeter, and still no spark with the plugs. So that whole side isn't getting power and I don't know what else isn't.
I also on a hunch reconnected the original wire from the solenoid to see if maybe I was lucky and it'd work normally, but nothing - it seems that in order for the starter to crank it still needs to be jumped directly to the terminal.
It doesn't help that I can't find a detailed harness wiring diagram, where it breaks down the harness to each individual wire.
I've been looking at a few wiring diagrams and I can sort of understand them but i'm still having problems seeing where the problem could be just by looking at them. A friend and I hypothesized that maybe the starter relay is bad. (we figured it's a possibility, but that's assuming that the ignition switch is good and the clutch button is good)
I wanted to test the ignition switch but after removing the key tumbler it eludes me as to how to even get the switch out, let alone test it (I had read a way to test it but I can't remember now).
What should I check next? (Other than fuel, that's on the list for my next round of testing)

If they're super wrong it will act like you blew a headgasket. white smoke and all. Whatever electronic modifications you made to the ignition will tell you the proper gapping and temp plugs.

Car smells richer now since plug change, i get 3-5 degrees of steady knock at WOT till i let off. I don't think its off awfully but the gaping isn't fully correct across all the plugs.
The only reason i want to be sure is when i go to the shop the amount of labor involving checking all 16 plugs is a pita and don't want to waste anyones time. But these logs i think show enough.

Pretty easy to check and gap your own plugs mate. Are they somehow inaccessible?

yes , 6.1 hemi sparkplug replacement is a bitch and a half gotta remove coil packs etc.

Unless you have some kind of AFR reading in your ecu, that you could pull, then I doubt you'd be able to tell, plus no real way to tell, unless the gap was too large and not functioning correctly, but no real way to check that but visibly.

Make damn sure the relay and ignition switch are actually wired up. Don't order just yet. use your voltage tester to check if there is current across the switch.

When I turn to acc and on things like the radio, clock, gauges and such work fine, could it be possible that all of those work, but the part for "start" doesn't run?
I also forgot to mention that when I turn the key to start, the radio goes dead and the lights dim like any other car does when it cranks to start, but in my case it does all that except actually crank unless I jump the solenoid wire

I know Nissan had a 4cyl engine in the hard body pickups, not sure if it was a KA, that had 8 spark plugs in the early 90s. Had something to do with emissions lol

What has been done to your car (performance wise)? If it's not a bad tune, look at the heat range of the spark plugs you have. I have to run colder plugs in my mustang due to the cams so I don't get detonation....

Its Mercedes answer to emissions law, two fronts of ignition cause the fuel to ignite at two places which helps speed up combustion. But this principle doesn't work as significantly in HEMIs because of the lower compression compared to the Mercedes M113 V8s that are from the same period.
btw, guys do your plugs yourselves, the mechanics literally just throw them into the motor straight out of the box without checking the gap
Most spark plugs I've bought recently have been pre gapped, but I still check each one. :P

Painted the axle, just did the tie rod a different color to get an idea of what the new set up would look like painted that color.

this is probably what happened, they assumed the mopar oem came pre gapped (Think they are NGK's in mopar boxes).
Well I mean the alfa romeo has a twin spark setup but they are performance (lol) not the emissions system.

Its honestly the best tool you could buy for your garage (provided its big enough), hands down bar none. This has payed for itself over and over again and still does, I dont know if I could go without it its just so damn convinient and such a game changer from swearing on the floor

So after determining I wasn't gonna be able to change the starter out myself for a number of reasons, I was telling my buddy how I was going to take it into a shop and pay to get it done. A few minutes later and a self service garage was found and we're gonna take it in to do ourselves tomorrow.
Should be way cheaper and way more fun and I'm super excited to use pneumatic tools.

Are you sure there aren't any? I had no idea any existed near me but I was able to find one thanks to the power of the internet.
Mine's probably 30-45 minutes away, but I think it adds to the fun since it becomes a full day with the car, part mini road trip and part labor of love. It seems like it'll be sort of like a track day, you drive a bit and pay a bit, but then you get all the fun of working on your car with all the ease of high quality tools and a nice garage.
