Ironically, I made my first steak today.
In the United States, the USDA regulates all beef. They grade all beef according to the amount of marbling it has, or the amount of fat mixed with the meat.
The Three Main ones are:
[b]USDA Prime beef. The highest, most saught after meat on the scale. You have to order this stuff, Or get it at a fancy restaurant for upwards of 50-60 dollars or more.[/B]

[B]USDA Choice. The shit you get at most restaurants and grocery stores.[/B]

There are 5 other types, Standard,Commerical, Utility, Cutter, Canner. I actually have no idea what these are used for.
The main cuts of beef are:

Chuck is ground for hamburger.
Ribs are ribs.
Brisket is brisket, more commonly eaten in the south as far as I know.
Flank is what they use for Fajitas.
Everything else except for the Shanks and plate can be made into a steak or a steak roast.
Shanks are used for soups and whatnot.
I think plate is just cut up like Flanks.
The nice thing about T-bone steaks is you get both cuts of New York strip(the longer half) and Tenderloin(the smaller half) in one delicious meal.
