Dragon's Dogma was so fucking good and I'm bummed that Capcom decided to try and make a DD mmo rather than DD2 which I might add the MMO blows from what I've heard.

Now I find I can reliably beat the biker with ease, but the first time you meet him the tension is real.
It seems I played very few games where the boss fight is something special and has his own theme. I can only mention a couple:
MGR:R - basically each boss fight has an amazing song to go with it but my favourites are "Red Sun" and "It Has To Be This Way"
HL2+Episodes - not boss fights but big fights which have very intense music (stopping Breen, White Forest, Lighthouse)
KotOR 1+2 - each final boss battle has a great theme to go with it
As much as I hate her, Bloody Marie's theme always gets me, especially the early and mid choir.

I really dig some of BL2's soundtracks, especially these 2 though the latter is not a boss theme, I still like because it has a Payday feel onto it.

I've always thought the boss themes were far more intimidating in Dark Souls 1 than 2, but the Looking Glass Knight's theme really hits the spot for me. Far and away my favorite boss theme in DaS2.
