In fact, if you looked at Beta Starcraft the Zerg were far more, well, fleshy and Tyranid-esque.

How old is that picture? It could be an older version of the Storm Troopers/Kasrkins. Other than that, I have no idea.

Cadia breeds the best soldiers you can get that aren't Space Marines.
Cadians are awesome, but every time I go to a tabletop game there's like 10 Cadian IG players, about 5 Catachans, and maybe 1 other regiment, if you're lucky.
I ran out of the green paints about 1/2 way through painting my soldiers, so I ended up making a cheap ripoff of the Angry Marines.

and it will be awesome.
The Ultramarines were chosen because they were created as a "standard" chapter.
That ultramarines guy even wrote the codex astartes and the chapter is know to follow it with religious passion.
If you are to introduce a new person into the WH40k saga the ultramarines are a good place for them to start. If i were the producers of the film though, i'd make it similar to the first few books in the heresy saga and throw in some good ole imperial army. Nothing beats rampaging titans.

Ofcourse, if i were to make this movie for warhammer zealots like me i'd make it an epic probably depicting a big ass clash between a massive chaos force and the imperial guard with space marines being used as shock troops. There would be no planetside action, just pure massive battle barge awesomeness.
Oh, and then daemons.
This has the premises to be a awesome-ass movie. I'm gunna wait for a trailer before I say anything though. Until I see chain swords and Dreadnoughts I won't be convinced. Still say they shoulda gone with the Space Wolves chapter, or the Black Templars.
The best storyline I can think of for a movie would be Caliban and the Dark Angels. From their pre-astartes days to Luther's betrayal.
I miss the days when 40k was a little tabletop game.
