Then the writers realized that a bunch of meme-loving adult men were watching and enjoying it more than little girls were and started shifting the tone to appease the bronies. If they hadn't done that, we wouldn't have this problem in the first place, or it would at least be a lot more toned down.

The show was designed from day 1 for "family appeal" meaning there was a decent focus on character development and the occasional adult joke or reference hidden in, after it took off they have amped that up a bit but that's always been the intent of the show. As for the origins of how it started taking off it actually came because some sensationalist critic wrote this absurd article on how the show's announcement was the death of animated television, someone posted the article on 4chan which lead to the guys there deciding to actually watch something before judging it.
Unless it's a babies show, pretty much all kids shows have jokes aimed at adults that kids won't necessarily get but will make the show more enjoyable to adults, because parents will watch the shows with their kids and the show makers know this. That's why mlp is enjoyable to adult men. It actually is tangentially targeted towards them from the getgo.
