If the water gauge was sealed at one end, the steam pressure would be pushing against the air strapped inside it, so the level of the water would never be accurate, it probably wouldn't even be able to get into it. Having it open means that the water would just be pushed out of it, having it routed so it connects to the pressurized steam inside allows the water level to show accurately what level the water is at inside the boiler. as the pressure of the steam is equalized at the level of the water inside the boiler and at the level in the glass tube.
In short, yes you get a cookie.

Im not sure if you would know but do you know how to work out how much pressure would be exerted on a container if it was for example evacuated of all the air then filled with a fluid?
So you would be talking about a negative pressure on the inside of a container? I can do some basic calculations yeah, but expect a 15% safety margin as i haven't learn't enough to take into account material purity and connections (ie soldering/welded joints)

Hi I`m new to this section and all but I was just wondering. Wouldn't it be more efficient if you had multiple small copper tubes filled with water instead of a big tank being heated so you have a much larger surface area being heated and thus more heat being exchanged quicker?

If your talking about a fire-tube boiler where the fire and heat is passed through tubes running through a larger tank then yeah, It is more efficient. But it's only necessary if you heating a large body of water. As volume increased as a square of the cross sectional area, It becomes less efficient to use one heat source the larger the tank is. (ie, tank is twice as big, 4 times the water to boil)
This method was used to a wonderful degree of complexity and efficiency in steam trains. But for my needs (and my capability with the tools i have) one heat source is enough. But yes you are right.

Finally managed to order in some parts, moneys been a bit tough to get a hold of and i chose food over bits of copper. Just have to get a hold of the technician guys in the engineering labs so i can use the equipment and tools.

Ive been experiencing some pretty bad financial issues recently, which have just been fixed in a weird way. house got burgled, but insurance payout has been pretty decent.
I will update as soon as i have something to update with, just need to go out and get some materials, and work out how to build a small venturi for the gas burner.
The yellow flames, although very pretty, have a habit of leaving a lot of soot on the boiler.
I was thinking of taking one off of a small turbo lighter if i cant build one, But as i kind of want this to be fully built myself il give it a shot. The theory is simple enough, its just a shame i don't have specialist tools which would make this a whole lot easier.
In the meantime, here are a couple of the bigger toys I've been working on in my absence! An FSAE racing car and a couple of pedal racers. Perks of studying mechanical engineering!

News: I've built a Venturi! The part with the pinhole was scavenged from a small blowtorch and the air regulator, the part that controls the amount of air flowing in was made by yours truly. I've done a fair bit of lathe work so I decided to make it a bit fancy seeing as it will be on show. Hence the cool looking "heatsink"

Another update. Decided on a better (and more complex) design for the burner, means I can make it smaller which is always a bonus. Everything's hopefully explained in the video.
Plus It looks the part!
