[b]Yoshi's island[/b] - Taught me to appreciate good game design/unique gameplay concepts, expressive graphics/animation, and fitting music. Pretty much the basis of everything that I appreciate in video games
[b]The Neverhood[/b] - The reason that I love really bizarre stuff in pretty much every form of media. This game sticks out in my memory for being particularly creative and detailed and the devs taking advantage of every tool at their disposal to make it feel as surreal and unsettling as possible.
[b]Banjo-Tooie[/b] - The first exploration-focused game that really engaged me. Showed me that, to enjoy an exploration-focused game, it has to have varied and interesting environments, the environments have to feel connected to each other, there has to be a meaningful incentive to explore that doesn't feel artificial, and has to have ability upgrades that not only fit with the character that you're playing and make logical sense in the context of the game world, but that also tie into the exploration well by opening up new areas to you.
[b]Super Smash Bros series[/b] - I've been playing smash bros games for literally more than half of my entire life and I'm still not tired of it and don't think I ever will be. The concept of knocking your opponent off the screen to kill them, having so much space to move around, the game having simplistic controls yet a lot of variation in playstyles and combat/movement options, and the roster being full of nintendo characters from franchises that I love, this series just has everything I could possibly ask for in a multiplayer experience. I guess smash bros showed me that a really fun concept can keep you engaged for years if it's good enough and well executed. Not all multiplayer games have to rely on reward/progression systems and padding to keep you playing.
[b]Portal[/b] - Was the first puzzle game concept that really intrigued me and resonated with me. Not only was the core mechanic engaging and unique but it's also thematically very well done, the idea that Glados teaches you all the tricks of the portal gun and then you take advantage of those things to escape and eventually use them against her, I think that's a really awesome idea, and that they did a really good job of building a story around the gameplay concept.

Final Fantasy IV/2US - First "traditional" console RPG I had played where the story was more than "save princess, kill villain"
Mega Man X - my single most rented video game. Showed me that a game can be so well put together that even after the 30th time you've completed it you STILL have a hankering to play it again.
I think Gran Turismo defined my affection for cars and racing.
