After Rocky IV was released people started joking that in Rocky V he would go off and fight space aliens. Some writers took the joke seriously and wrote that. The movie was Predator.
When trying to find the right sound for the giant boulder in Indiana Jones the crew spent several hours rolling rocks down a mountain but none of them sounded quite right. On the way down, they stopped the driver and told him to put the jeep into neutral and kill the engine. That became the sound that was used.

In the beginning of Transformers 3 you can see that the environment were actually small toys on the table being hid with camera tricking. The crash site that is.
Not an actual movie, but more of a TV show's trivia:
Unlike other sitcoms, [b]Red Dwarf[/b] never used a laugh track. All the laughter was from a live audience, who were present during the shooting of the scenes.

Until recently, films starring Jackie Chan never used stuntmen for Jackie. He did all of those stunts himself. This earned him a LOT of injuries and fractures. Nowadays however, age has caught up with him and he started using stunt doubles for a few stunts.
