Could be anything; most food stuff turn to coal and start burning when heated sufficiently. He probably left the plate on. I remember turning popcorn into a charred mess once, didn't start glowing though.

probably something with sugar in it. if you start to burn a caramel or something along those lines, it starts foaming up, and then I figure if you don't turn it off it just turns into really hard black stuff
