The Aquatic Ape theory, while interesting, is not a generally accepted scientific theory. Far from it. All adaptations that are attributed to an aquatic lifestyle have an alternative, and often, much better explanation.
And about that blubber, the theory talks about the fat in infants, not adult woman! Interestingly, unlike other primates, human babies can float due to this fat. People who support the theory see this as an adaptation to living in water.
