There are a lot of recipes that use Raw Eggs. Meringues, Egg Nog, Caesar Salad, Cookie Dough.
Having Hens vaccinated against Salmonella makes it easier and safer. You can then store eggs at room temperature and not have to worry about buying Pasteurized eggs if you want to make recipes like those.

If you read the article Eli_r posted, it says they're washed right after they're laid. Which removes a protective coating requiring them to be refrigerated.
