It's probably a combination of several things:
- Star Wars is one of the most recognizable pop-culture franchises
- A lightsaber is one of the most iconic and well-known weapons
therefore a lightsaber joke will almost certainly be understood by folks on the internets
Also most lightsabers look pretty much the same. Outside of Maul's double-bladed lightsaber, the most irregular saber seen in the movies was Dooku's curved hilt. And unlike Maul's saber, the light crossguard does not have an immediately obvious use (double-handed weapons, like staffs, are common while blades with bladed crossguards are not) so it's easy to quickly make fun of.
Finally, lightsabers are a single solid color and therefore very easy to photoshop.
