I keep seeing some awesome shit coming from SFM, but I always wonder why nobody has tried making something with SFM using their own assets. Is it actually possible to use custom assets or can you only use TF2 stuff?

You can use anything that's in Source Engine .mdl format.
It is possible to create and animate your own 100% custom world, but it's a tremendous amount of work. Plus TF2 is really popular, maybe people just find it more interesting.

With the amount of work it takes to animate it all already, few people also want to take on the work of modeling everything from the ground up. It's just easier to use the already made assets.
