Because your computer is very likely rendering the game somewhere between 50/55 and 60 FPS, rather than a perfectly smooth 60 fps. WEBMs are completely smooth and a constant 60fps which gives them this really clean feel.
So basically recording is to blame. Same reason why when recording an old game the sprites will sometimes disappear instead of flicker like they're normally intended to do.
