They do make some guns by hand, I think that VICE documentary showed some guys making handgun frames with a belt sander, a drill press and files.
They do slap together some pretty bizarre pieces in the process though

If we want to continue the sandwich analogy this is probably somewhere along the lines of oreo cookies and barbecue sauce, and the bread has gone stale.

These look to be mainly MP5 copies, visually at least, with some also sharing traits with AKs, Galils, and that one in the back here has an AR style fore-end.

They make some by hand, yes. Mostly simpler guns like Martini-Henry rifles and Webley revolvers. The AKs are all parts stuck together, however. They might make simpler parts like the receiver themselves, but I've yet to see one that's as hand made as some people claim them to be.
It's like Borderlands in real life.

Definitely make semi-auto pistols like TT-33 clones, etc. Watch the documentary.

what is the point of the mateba? it can't be any more accurate than a normal .38 special with that short barrel, maybe its balanced better but doesn't a longer barrel generally mean a more accurate gun

Well, barrel in line with grip gives much less recoil. Same idea with the chipper rhino. Also the same guy who designed chipper rhino designed the meatballs.

Is actually copy of glorious Finnish L35, that the Swedes bought the license to manufacture, and also sold a sizable amount to the Danes.
Also, something that I think is neat about this design, Lahti was concerned about the possibility of these things freezing up in cold conditions *coughHK416cough*, so he designed the gun to have a "foot" that kicks the bolt after unlocking to make sure it cycles
