Baccano and Cowboy Bebop OPs are probably my favorite.
I love all OPs, though. Except for OP2 of Code Geass. That was terrible.

Keep in mind I've only seen the English dub and haven't watched the Japanese dub yet.
I liked the ending, I don't really think it was vague or evangelion-y at all. [sp]The last blue they killed wasn't the mother blue, it was just the next step in the blue's evolution, I think. The reason the blue existed was because the Earth got sick of humanity's shit and wanted to get rid of them. When the most of the humans fled to space, the blue went into hibernation because they were no longer needed. I don't think theres supposed to be any deeper meaning in it. The people on the space station blew themselves up because they went stir crazy. They were all life long soldiers and they were refused a war to fight and were forced to be confined in a cramped space station. Yah it's a little silly but considering the series is about mechs stomping on big bugs, I think it's pretty fitting.
Not sure how you're unsure if the MC and his woman boned or not, it was pretty obvious. It pretty much showed the whole scene and Marlene got preggers afterwards.
I also liked the character development. I thought it was kind of cool how MC and Marlene traded their ideologies on the worth of life about 2/3 through the series. [/sp]
For a 90's mecha anime It's pretty good, obviously it isn't perfect and definitely has it's flaws, but I think calling it an evangellion rip off is a bit harsh.

Only ones I watched every single episode was the Macross OP and attack on Titan OP(so far). The Attack on titan op is incredible
even though this OP was for 25 episode, and i was marathoning the show, I still watched it every single time. I usually skip OPs. Sometimes only after the intro.
