It depends on the subject. Clouds are usually good for 2 second intervals. Fruit rotting can be a couple of hours or more. etc.

honestly, that's your decision on how long you want the overall timelapse to cover versus how long you want the video to end up.
If you want a smooth playback of fast moving stuff (like people, cars, cities) you should make your interval twice your shutter speed. So if it's a 1sec shutter speed, 2sec intervals will have a really nice smooth playback.
In daytime you might need a ND filter to get slower shutter speeds to avoid people jittering around.... unless of course, that's what you want.
