Did he really just just cut the end of the fuel probe off with the helicopter's rotors? I always assumed rotors kinda disintegrate if they touch anything

Also the refuel pipe is a pipe, not made for structural stability and not placed with the idea that the probe would ever need to take punishment.
Could have been worse, if the rotors got tangles into the pipe, seems like the best outcome in that situation.

It's physically impossible for a pipe like that to become 'tangled' with high-speed moving blades. It's a metal tube and the blades are moving at high speeds. The blades are (unsurprisingly) blade shaped and moving rather quickly, so they have no difficulty cutting through a thin metal tube. I'm sure they could cut through a lot more than that without sustaining any kind of significant damage.
