I came in here thinking "you know, I'm going to make an omelette thread. I bet they don't have one of those" Well shit Anyway, the best omelette I've ever made was shamelessly stolen from a restaurant I ate at a long time ago (it's a touch pricy to make often but it's piss easy) You'll need: 2 eggs Butter or margarine Milk Shrimp (frozen/fresh preferred, canned is fine if you dry it first) Quarter to half of a tomato, chopped up into small cubes Pesto (that green pasta sauce if you don't know) A soft goat's milk cheese Right off, if you're using frozen shrimp thaw some out first. If you're using canned shrimp dump some into a paper towel to dry it off. Preheat a frying pan with a small dab of butter or margarine. While this is happening, crack 2 eggs into a bowl and add some milk. (The amount depends on what kind of consistency you want, more milk will make the egg fluffier. I never measure, just a quick pour) Mix the milk and egg until the yolks are broken and spread out but not necessarily until scrambled. When the pan is hot dump it in and get the rest of your stuff ready. As soon as the top surface of the egg is solid, spread a layer of pesto on it and dump your chopped tomatoes and shrimp over half. Use as much or as little as you like. When the egg is beginning to brown to your liking, fold it over and immediately sprinkle the goat cheese over the top so the heat of the frying pan melts it a bit. (Goat cheese doesn't melt like regular cheese so don't wait for it to liquefy - it won't) You won't be able to flip the omelette over at this point so make sure you let it brown a bit more than normal before folding. Once you're happy with it, add pepper if you want and eat.
I usually make my omelettes with potatoes and cheese, because I don't feel like going through the trouble to get anything else. If I'm at a restaurant though, I usually order a Denver omelette.

It sounds very different from any omelette I've ever eaten. maybe i should try it some time.
For omelette's, onions, chives, bell peppers, shredded cheese, & sliced bangers. It's simple and tastes amazing. Hot sauce is a must for an omelette. No exceptions.

My omelette's consist of: Egg. Black pepper. (Lots) Green pepper. (Lots) Jalapeños. (Lots) A dab of Green Tobascco. Pepper Jack Cheese, or Swiss. Some times Cheddar. Sliced bacon. A little ground red pepper. Ranch Dressing as something to dip it in when it's cooked. (Sometimes) But I rarely cook omelettes.

I was going to make an omelette the other day. I got all the ingredients I wanted together and prepared. I then opened the fridge to discover we didn't have any more cheese. I was crushed. I'm a big cheese fan. However the omelette still turned out great!
I mix it with Salami, bacon, cheese, onions, cucumber/pickles and tomatoes often. Good stuff.
You know what I've discovered with my attempts at frequently making omelettes (french countryside style)? The eggs mix with the fat from the ingredients alot better with cooking cream. It works a charm with scrambled eggs as well, but really pitches the taste a dozen for when it comes to eggs over all. I usually use one decilitre of cooking cream on four eggs, so it's not really that much.

I always use Cheese and Bacon, But I think I might try out some of these though.
I like Ham, and there's this cheese that gets made by this local farm called Brimstone. It's awesome, it's like pepperjack, but made with jalapeños and habanero peppers. Goddammit. I really want some now...

My mom always uses up most of the ingredients in the house for dinner so I am not left with a lot for omelettes but that just means I have to get creative. Today I made an omelette using the chicken fajitas from last night, some mozzarella cheese, half a tomato, two spicy peppers and I made a side of hash browns to go with it. I much prefer making my own omelette as opposed to one from a restaurant because they either 1) don't have a perfect combination 2) it ends up costing too much because of all the food I want in it.
This isn't exactly omlette because the eggs aren't the main thing but here's what I like to eat with eggs: stewed yellow paprika , onions and tomatoes until they're mushy. Then add eggs and salt everything. Don't know what it's called in English, here we call it "sataraš".
Every time, its always ham, cheese, onion and peas. Tastes amazing. Also, do you guys cut your cheese into small blocks or grate it? I use blocks cos its easier but is grating better for spreading it out?
I grate my cheese when I put it on omelets. Also, ham is good, but I like turkey also.
Feta cheese and small slices of pastrami. Do it. You'll thank me.
I made some awesome eggs today. Got a blender and belended some eggs and feta cheese. Onto the olive oiled pan at high heat. Flip and brown. THATS YOUR BASIC ARMY ISSUED OMELETE. LOVE IT AND IT LOVES YOU BACK.
I use pre-grated cheese from the store.
Can someone post a step by step of the art of omelet crafting?
