The point of the seventh string isn't to pitch the guitar lower, it's to extend the range by an average of five to seven semitones. Tuning a baritone high, that would be contradictory.

I plan on converting my 12 string acoustic to a 7 string, and tuning it something like:
Db Gb B E A Db Gb, or standard 7 string tuning up one step
If you want to mess with tunings.
CGDGBB or CGDGCD sound amazing.

The width of my 12 string neck is very similar to the width of my 7 string RG, and of course it already has more than enough tuners :D

But will the neck be tough enough?
If it can handle 12, it can surely handle 7.
Though to be honest it can't really handle 12, after 5 years the neck had a bit too much bow in it. I now have 8 strings on it and it has returned to a better action and seems to hold up fine.
