It's got a longer scale length than usual if I recall correctly.
Ibanez did make a production line of a 27-fret Xiphos and a 7-string Xiphos independently.
The coil-tapped EMG's are just a personal thing.
All I need is a fuzz pedal and some reverb and i'm set. ;)

Manson makes several models with a Fuzz Factory built into the guitar. At that point, all you need is reverb.

I saw some no-load capacitors rated at 500K by cts, and from what I understand after a certain point it becomes a bypass? If so that would be useful for a tone pot.

My Dot's always run 11's. But they were out today and I had to buy 12's, so I strung it up with them.
Being that thick is it gonna damage the neck at all or anything?

You should probably adjust the truss rod some.
you might get a slight more neck bow but other than that it should be fine as it is
but if it really bothers you then yeah just tighten up the truss rod a smidge

Yeaaah. I figured I'd have to adjust the truss rod. I've never done that and I don't know what I'm doing though. So any tips or should I just get a friend to do it?
