The Burstbuckers are a comparative pile of dick, I'd go ahead and say that (in my opinion) Gibson pickups are sickeningly overhyped, and I would gut them out and put the money I could make form selling them towards a set of Bare Knuckles (who have a deserved hype, again in my opinion)

What do you guys think of Ibanez Infinity Humbucker Pickups? I've currently got them in my S series and am thinking of upgrading. Would it be worth it?

Should do, there's contact info either way. If buying international doesn't sound too appealing for pickups (pretty understandable) check out WCR or Wolfetone pickups since they're based in the States. I haven't tried them but I've heard nothing but good things about both.

Infinity's are pretty wank, you'll hear a difference, but if your amp is a bit shit go for a new one of those first

It's not the idea of buying internationally, I just don't like making $80 phone calls. I'm thinking I'll just post on their forums.

Also I'm looking to buy one of those programs that lets you plug your guitar into the computer and then you can have loads of amp models, because I'm not happy with my current amp/pedal setup and I don't want to buy a new amp.
What would you say is the best program for this stuff?

I'm thinking the Gretsch Duo Jet is a far more realistic choice for a dream guitar. It's a good £1300-£1500 cheaper.

It is godlike. Don't bother with amp modelling software unless you have a killer PC, it lags like a bitch. I have heard some decent tones but you still need a good audio interface like the Pod, and you can use that to make your tones anyway.

There isn't really a "best" one.
Guitar Rig has a large array of options, and sounds pretty awesome, but the presets suck ass. Good enough for some bands to actually record with, but it's not better than a real amp by any means.
Amplitube has slightly more "realistic" amp sounds, but the effects and such are kind of assy and it's not as intuitive as GR to set up. You also have to buy a bunch of expansions to get anywhere near the same versatility out of it as GR. Still has it's applications, I've used it and GR alternatively for different amp models before.
I've also heard Waves GTR is good, but I've never tried it and don't intend to because I'm sick of software modeling. Or, rather, for the money I could spend on it just to go "ooh, Mesa Boogie models", I could get a hardware unit.

From what I've heard done with it, it's amazing. Intending on getting a rackmount of it sooner or later.
