Nah, they don't record, they're VST effects.
Let's say your normal recording setup is an interface going to your computer, with your amp and associated nonsense either plugged into the interface or in front of a mic that is instead.
With Guitar Rig (or Amplitube or Ampeg or Peavy's nonsense or Revalver or whatever) you just plug the guitar directly (or maybe with a preamp if it's not a hi-z input) into the interface, and then the effect models your pedals, cabinets, amps, mics, compressors, etc. instead.
Basically like what a Pod or modeling pedal does, except software only. You can run them in Audacity, actually, considering it has VST support, but for complex editing Audacity is kinda a rubbish DAW.

Amplutibe is nice. Has a lot of options and runs really fast. The issue with it is that there is no portability and you'd probably be able to get comparable sounds with the Pod. You can get a 10 day demo of Amplitube so you should probably try it out. Amplitube would be the thing to get if you're just doing stuff at home. I remember reading a link where they tested some knowledgeable guitarist about which was the modeled and what was real and I think only a third could get it right. I'm not certain of that number, but if I find that link again I'll post it.

Audacity is terrible for mixing or recording any large projects. Audacity is more an audio editor more than anything, it lacks so many tools for making songs.

TL-2 with good settings will give you pretty good Metallica thrash sound (like the 80's tones), or even United Abominations from Megadeth.

I think that the Iceman is better than RR5 because I have a bias against Jacksons.
Also the Ibanez has Dimarzio D-Activator pickups in it which are very hot.

I have a destroyer which is basically the same guitar
it's really chunky with distortion
really articulate
easy to play
easy to maintain
it is really heavy though
great guitar all around though, probably an 8/10

I already have Amplitube (metal and I think Fender or some other version) and Guitar Rig. I'm asking if anyone in here would be willing to listen to just, like, one rhythm bit, copied across a few models, and tell me if they sound "plastic" or not. Because they do to me.
Then again I suppose I'd have to try mixing something with it to really know how it'll sound in action. Nevermind, I guess, I'll just play with 'em a bit more.

Oh...single core, huh? That explains it.
Also I've never seen your drumset but I know I could afford what I could between my job and holidays, although I do get paid pretty well for retail work where I live.
Anyway...you might want to make your next investment a homebuilt PC or at least a mid-level pre-assembled desktop so you can run some better recording software. Audacity really is more of a mixer.
