We've been doing that for like two months or so
If I get mine and the demand is still huge, I'll probably sell it for a little profit and reorder. When I actually get it, I plan on making nice wooden cases for them and selling the cases, or maybe complete packages of prebuild computers

Now this I like.
What would the resulting mesh network do? I've personally had plans for nomadic air quality sensor networks before.
With my Pi, I will get banned from electronics stores for borrowing their TVs.
I was thinking of sticking one to a radio controlled 4x4 with a 3G data connection, A decent set of webcams, some electronics to interface with the motors and a decent sized battery pack and remote control it from my living room.
Maybe some sort of two way audio communication and GPS on there to for good measure.
Not that I'll be buying one yet, I'll let the early adopters take the bugs and I'll buy it after a revision or when the hype calms down a little.

Well I'm sure you can just set up an analog wireless video feed instead of having to use the Raspberry if you are planning for that.

I've actually been thinking about doing something similar to that.
Though I could probably pull it off with a used Android phone and using the minijack port as a signal in & out port.
I don't know for sure what I'll do with mine, but it will probably involve a gauntlet wrist computer and some small radioshack solar panels.
