One thing about weightlifting is you're always gonna be criticized on how you do things because there are so many different views on what you should or should not do. The best thing you can do is take the criticism with a smile and explain why you're doing something the way you are doing it.

Have been eating a lot of junk food lately, so my plan on staying on a diet to help with cutting the fat hasn't been going too fast.

Goddamnit I hate working late shifts because we don't have a 24 hour gym. But I can never be arsed to go in the morning or else I am tired as fuck during work.
What would you guys recommend to help me get the fuck up and just go, it's my only problem with inconsistency is my work schedule.
If your only option is the mornings as you've said and you're too tired / arsed about it, then rearrange your priorities. People workout, usually, because it's fun.
I had quite a bit of pain around my tailbone last week after squatting. After giving it a bit of rest (I was on holidays for a week) I haven't had the same issue. I'm assuming this is a form issue however I'm not sure what I'm doing wrong, I've looked at a tonne of tutorial videos and read a load of articles, I've even asked the gym staff for help and they've said my form is fine. I do feel it in my lower back however - not so much pain but pressure almost, is this just my body getting used to the technique? Any tips? I don't want this to be a recurring issue.

Maybe your general posture is affecting your lower back. I use to have this problem where I was all hunched over and after standing for a long period of time I would get a pain in my lower back. You could try seeing a physio to assess your back and see if there are any problems.
What exercises do you guys suggest to bring the obliques in toward the body? I don't want mine growing outwards.
cable crunches, hanging leg raises, decline weighted sit ups

I believe genetics determines how your obliques grow. No exercise can control the shape of your obliques, or any muscle for that matter AFAIK.
