I saw like 5 once.
I was looking for Russlayer yesterday, suddenly I see him emerge from the dark running full pelt as 5 or so mobs chase him Benny Hill style.
Currently we're on normal difficulty but if you guys really want I could increase it.

The difficulty isn't the problem it's that mobs never spawn

Can't you tell what player manipulated which blocks in the console or something?
Or is that not an option in vanilla?
Pretty sure that's an addon, the old server I played on got griefed so we had to get a mod that shows which blocks were placed and it also had chest logs.
I looked at the logging mods and they all seem to be made for Bukkit only servers.
Minecraft vanilla does store some logs though, which I'm going through now.
