Princess Mononoke. It's anime but is very serious, and doesn't use any asinine things that make some animes unbearable.

Obvious ones are I am Legend, 28 Days/Weeks Later, other such zombie films.
In terms of half-apocalyptic, half-dystopian, I'd recommend Children of Men.12 Monkeys is also pretty good.
I can't quite think of a film that [I]really[/I] captures the feel of post-apocalyptic-ness though... Book of Eli comes close but!
