I'm honoured.
Cheese is great and anybody who says otherwise has no appreciation for fine foods. Especially strong cheese.
I got cheese for Christmas once, some really good Wensleydale with Apricot and another Wensleydale with cranberries.
When my son lived at home he had a sign on his door that said "come in if you have cheese".
Not sure how much there is to discuss about cheese, but I once read that Inuit people think we are mad to eat "rotting animal milk".

I enjoy Jarlsberg, swiss cheese and brie. They're all quite versatile, and have an easy yet sharp taste. hmmyes.
Cottage cheese.. Is it really cheese? I find it more apt as an ingredient or condiment than a full-out cheese. Like sour cream.

One of my uncles that has a job in which he commonly goes to Italy for, brings back the best fucking Italian cheese every time he comes back!
I remember seeing a show on cheese on either History or Nat Geo and damn, was it informative. They had this guy who was a cheese expert and ran a cheese shop who knew so much and talked about some very interesting cheeses. Probably one of the most interesting cheeses talked about was this one that had this hard outer core that was due to like some sort of insect. Letting the insects make themselves at home in the cheese is actually part of making it. The guy said he wasn't 100% if letting the insects do stuff affected the taste, but it definitely affected the look. There's all these tiny holes on it too.
