also, depending on your goals, your protein demands are miniscule and eating carbs is a breeze (who doesn't like an extra cheetos or whatever in their belly?)
i would go further and assume this is more of a mental thing because it is more natural to overeat rather than undereat. once you get yourself under a consistent regimen you'll be able to change that mind state

I'm not a girl but I just can't comprehend how it's hard to stuff 1200 calories down your throat in a full day, I can get that much in a single meal.

But you must somehow. 1200 is for someone who sits and sleeps all day, and not for someone who works out , studies (brain consumes a lot of energy), etc...
I also can't eat much, so when I workout I split one meal in three parts : fruit (sweet), main meal (something meaty, oily, salty :P) then again something sweet (cornflakes or some milk product). Since there is a contrast in taste I can eat more per meal.
PS: How about you buy some peanuts or walnuts ? Those are caloric bombs, but are full of proteins and healthy oils. Eat a bit of those every day. You could even make cookies :)

I'm still adjusting to my new calorie goal. I used to eat no more than 300 a day ( yay for eating disorders), so 1200 is a huge increase for me.

Oh, I wasn't aware you had that kind of past. My cousin was even worse, barely made it trough. She was a bit overweight, went on a diet and couldn't stop. Was around 37 kg at a height of ~165 cm two years ago, completely ruined her life. She gained some weight now, but she has a long way to go. Just few days ago I saw a picture of my school friend on Facebook... same thing. Wanted to look good for the prom night, but it seems she didn't stop there.

Yeah, eat more, even if anything above 1200 doesn't seem feasible, just eat more or eat more often throughout the day and try to break that barrier, you'll look and feel better.
I don't have much experience with eating disorders so I'm not too sure how to help on that one, this delves more into the realm of psychology than fitness so all I can really say is eat more.
