I don't give to churches because I'm absolutely broke and I prefer to give to charities and outreach programs that help people and not pay for a church to run.

If she really insists on donating money then suggest a non-profit organization that helps the poor. Donate directly to an orphanage or a homeless shelter. Cut out the middle man. If that's what the church is spending most of the money on anyway. they I'm sure they wouldn't mind.
