I made the batter out of flour, water, salt, pepper, garlic, paprika, and a little bit of curry powder. I was originally going to use onion salt but I couldn't find any, so I used Curry because I heard it's good with fries. Apperentley over in Britain you can get "Curry and Chips" in Indian restaurants there, and people love 'em.
I love fries with salt... not too much though...

Bringing up homemade fries reminded me of how my grandma used to make wedge fries for the family. Haven't had homemade fries in years, maybe I'll ask my mom if we could try it.
Heck, it seems rather simple, but then again I know very little about cooking so sorry for the following ignorance.
1) Peel
2) Wash
3) Cut
4-Optional [AKA Wild guess on the seasoning because I never did pay attention]) Season with ground pepper and possibly garlic
5) Set a batch into pot of sizzling oil
6) Wait
7) Take out
8) Let it cool
9) Enjoy
I would have to say they were mostly likely better than any fast foods fries I had eaten back then.

Peanut oil is the best for making your own thick-cut chips (or fries, as our neighbours across the pond call them) and if you deep-fat-fry them properly, you can have chips without any grease at all. Lovely. Shame that peanut oil is the highest in cholesterol really, but provided you have the chips as a treat every month or so and eat a balanced diet it will do you no harm.

EDIT: Yeah. Just looked it up, it's found in ANIMALS, not plant-based foods like peanuts.
