Basically Nick consider each block of 26 episodes a season. But book one is 12 episodes, book 2 will be 14 and then book 3 and 4 will both be 13. Each book is supposed to be a separate story I think (hopefully they will still have an arc maybe).

Also I noticed on my second run through of ATLA, that that bounty hunter lady is arm wrestling Ryu when Iroh and Zuko go to meet her. Can't believe I didn't see that the first time.

Then I don't think you missed much. The second book is more about spirits. Someone once posted an animatic of what I think is Book Two: Episode One.
I think there also was some kind of 'making of Legend of Korra' thing, but that wasn't particularly ground-breaking. I think you may have even seen that already, it came out shortly after the last episode aired.

It wasn't, but the current rumor mill (according to cast member's twitters) says april.
